This is a nice soft chocolate frosting which I often use on chocolate cupcakes. This recipe makes more than enough frosting for my 2 dozen cupcakes, though I tend to frost lightly.
- 1/2 pound cream cheese, at room temperature
- 1/2 cup (1 stick) butter, at room temperature
- 4 oz bittersweet baking chocolate
- 1 pound powdered sugar
- 1 tablespoon vanilla
I've had good success microwaving the chocolate on low speed in a ramekin. This is much easier than working with a double boiler.
Mix all ingredients together, and keep mixing for about 7 minutes. Frost onto cooled cupcakes.
